We only rear 130 birds a year, as they are all hand plucked and hand prepared, which is very labour intensive.
The birds are outside during the day and at night are locked up to protect them from foxes.
We find that our birds have a natural layer of fat under the skin which helps in the basteing process and also adds to the wonderful flavour.
